{"id":354,"date":"2012-03-17T11:39:47","date_gmt":"2012-03-17T11:39:47","guid":{"rendered":"http:\/\/960development.com.s142956.gridserver.com\/themes\/recipe-theme\/?post_type=recipe&#038;p=354"},"modified":"2021-09-18T23:25:46","modified_gmt":"2021-09-18T23:25:46","slug":"vietnamese-style-grilled-five-spice-chicken","status":"publish","type":"recipe","link":"https:\/\/foodrecipes.inspirythemes.com\/classic\/recipe\/vietnamese-style-grilled-five-spice-chicken\/","title":{"rendered":"Vietnamese Style Grilled Five Spice Chicken"},"content":{"rendered":"<h3 class=\"blue\">Ingredients<\/h3><ul><li class=\"ingredient\" itemprop=\"recipeIngredient\">6 cloves of garlic, sliced<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1 large shallot, coarsely chopped<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1 tablespoon, peeled and minced fresh ginger<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">4 teaspoons sugar<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1\/4 cup soy sauce<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1\/4 cup fish sauce<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1\/2 teaspoon five-spice powder<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">Freshly ground black pepper<\/li><li class=\"ingredient\" itemprop=\"recipeIngredient\">1 chicken (about 3 lbs) cut into eight servings<\/li><\/ul>\n<h3 class=\"blue\">Method<\/h3><div><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 1<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">In a mortar and pestle or small food processor combine the ginger, shallot, garlic and sugar and smash to form a paste.<\/p><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 2<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">Create a marinade by transferring the paste to a small bowl and whisking in the soy sauce, fish sauce, five-spice powder and a healthy dose of pepper.<\/p><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 3<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">Rinse the chicken pieces in cold water and pat dry.  Place the chicken in a large, resealable zip-top bag and pour in the marinade.  Toss the chicken inside the bag to cover evenly with the marinade and refrigerate for 12 hours or as long as overnight.<\/p><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 4<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">Prepare a charcoal or gas grill for direct grilling over medium heat.  Remove the chickens from the bag and reserve the marinade in a small bowl.<\/p><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 5<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">Place the chicken pieces skin side down on the grill directly over the heat until the first side is nicely browned, about 11-12 minutes.  Baste once or twice with the reserved marinade during the first stage of grilling.  Turn, baste again and grill until the chicken reaches the internal temperature of 165\u00b0, about11-12 minutes longer.  Do not baste chicken during the final 10 minutes.<\/p><h4 class=\"red me-steps\"><span class=\"stepcheck\"><\/span>Step 6<\/h4><p class=\"instructions\" itemprop=\"recipeInstructions\">Remove the chicken from the grill and let rest for at least 5 minutes before serving.<\/p><\/div>\n","protected":false},"excerpt":{"rendered":"<p>It may not be in my best interest to admit this, but here goes nothing: grilling chicken scares me. It\u2019s just too easy to get wrong. Black, cremated skin on the outside with an interior so pink that just looking at it might give you salmonella. Or worse, well-cooked flesh with skin so flabby that it can be removed in a single piece. I think this is why I am especially in awe of Vietnamese chefs.  I\u2019m not exactly sure how they do it, but somehow they\u2019re able to keep their grilled chicken juicy and moist  inside, but with a crisp exterior reminiscent of deep-fried chicken skin.
